REFRESHING BRUSCHETTA
Bruschetta is a popular starter recipe from Italy. It consists of grilled bread rubbed with garlic and topped with olive and salt. Variations may include toppings of tomatoes, onions, vegetables, beans, and cheeses. In Italy, bruschetta is often prepared using a brustolina grill.
Ingredients
Homemade Paneer (Indian Cottage Cheese)
- 1 large Tomato
- 1 small Red Onion
- 5 to 6 Fresh Basil Leaves
- 2 tsps. Olive Oil
- 1 tsp. Vinegar (Balsami/White Vinegar)
- Mixed Italian Herbs
- Black Pepper Powder
- Pink Salt

Nicely washed veggies/herbs.

Finely chopped tomato, onion, basil, and homemade paneer.

Arrange the garlic bread on a baking sheet.

Golden brown toasted garlic bread (at 400 degrees F)

Olive oil, white vinegar, pepper, and salt to add to the veggies.

I’ve mixed them together and kept them separate from the veggies.

Assemble the bruschetta by placing cheese, tomato, onion, and basil on top of a crispy garlic bread. Top it with the seasoning oil.

Refreshing Bruschetta, bursting with the flavors of basil, tomato, and olive oil is ready to eat.
Notes:
Bruschetta is something, which everyone likes in my home. Garlic bread makes this recipe much easier. Throw the bread into the oven in one go and all done under 5 to 8 minutes. We may also toast a regular bread and brush it with garlic infused olive oil. Or a plain toast with a little grated garlic into the olive oil.

We may use either garlic toast or five cheese toasts to create a perfect bruschetta base.

Tricolor Sandwich 🥪
A sandwich is a food typically consisting of sliced vegetables, placed in between bread slices. In other word, a recipe where the bread serves as a container or wrapper for another food type.
Main ingredients: Bread, cheese, salad vegetables, sauce or savoury spread.
The key to make the sandwiches taste better is to use flavorful condiments. Whether it’s hung curd, vegan mayonnaise, cashew cream, mustard, coriander-mint chutney, tomato ketchup, dates sauce, or some kind of relish.

Tricolor Sandwiches 🥪
Ingredients
- 4 Slices Of Oatnut Bread 🍞
- (for☝️ set of sandwich 🥪)
- 1 to 2 Firm Tomatoes 🍅
- 1 to 2 Persian Cucumbers 🥒
- 1/4 to 1/2 cup Cheese/Paneer 🧀
- Tomato Ketchup
- Fresh Coriander-Lemon Juice Chutney 🍋
- 1/2 cup Hung Curd or Butter (optional)
- Freshly Ground Black Pepper
- Pink Salt 🧂

Place all the ingredients in one tray…

All of the above ingredients plus the optional butter…

Thinly sliced tomatoes…

Grated store bought paneer..

Thinly sliced Persian cucumber…

Sweet n Sour tomato ketchup, and fresh coriander-lemon juice chutney..

Oatnut Brown Bread 🍞

Trim the dark edges of the bread slices (optional), and place them on a flat surface like our chopping board…

Apply a thin layer of butter on one side of the all four bread slices…

Apply tomato ketchup on one slice, green chutney on the second, paneer on the third one, and leave the fourth slice as it is…

Arrange the tomato slices on the first slice, cucumber slices on the second one..

Sprinkle freshly ground black pepper and salt on top of all the slices (as per our preference)..

Now is the time to assemble all four slices. Place the paneer slice on top of cucumber slice..

Next the tomato slice on top of paneer slice…

Finally, the fourth slice (buttered side down) on top of the tomato slice…

Gently press the sandwich with your palm..

Using a sharp kitchen knife, cut the sandwich diagonally..

We can do any changes to it as per our preference or on the availability of ingredients. For example, we may use the slices of boiled potatoes or sweet potatoes, grated carrots, bell peppers, or onions. We can even use the toasted bread or toast the whole sandwich. May use any bread of our choice. Cut it into four rectangles or three long strips (Finger Sandwiches).

Ingredients
- A box of Tomato Medley
- 2 Persian Cucumbers
- 1 White Onion
- 1 cup Paneer/Tofu Cubes
- A few Fresh Mint Leaves
- 1 Lemon 🍋
- 1 tsp. Olive Oil
- 1 tsp. Black Pepper
- 1/2 tsp. Pink Salt

Properly washed tomatoes, cucumbers, onion, and mint are ready to chop into the desired size pieces..

Keep the paneer pieces in hot water for 10 minutes..

Before chopping the vegetables, drain out the water and let the paneer cool down to room temperature...

Chop the vegetables...

Gently combine all the vegetables-paneer and transfer them into a serving bowl/plate...

Bright tomato medley stands out so well in this salad...

Add fresh mint leaves, pink-salt and a generous amount of black-pepper...

Finally, pour the fresh lemon juice, well mixed with some olive oil...

Note: Tomato Medley Salad is a keeper. For all occasions, it is one of the easiest, gorgeous, and refreshing salads to assemble. We can also create it using regular tomatoes. Multigrain And Gram Flour Laddu
As the name suggests, these delectable Multigrain And Gram Flour Laddu are made from the coarse whole wheat flour, and a very wholesome Chana dal (Gram lentil) flour called ‘besan’. Its astounding flavor derives from the slow and proper roasting of flours. Flours should neither be under-roasted nor over-roasted.
Again, it takes some practice to roll the laddu from the roasted flour mixture. Place a scoop of mixture on your palm, firmly press it 2 to 3 times with your fist. Later roll it on your palm to give it a smooth and nice round shape.
Ingredients
- 1 cup Multigrain Flour
- 1/4 cup Besan (Gram Flour)
- 1/2 cup Ghee (Purified Butter)
- 1/2 tsp. Cardamom
- 1/2 to 3/4 cup Organic Cane Sugar (or jaggery)
- 1/4 cup Coconut Powder
- 1/4 tsp. Nutmeg
- 1/4 cup Cashews
- 1/4 cup Almonds
- A few Saffron Strands (optional)

Place a heavy bottom pan on low heat. Add a little ghee…when warm enough….add cashews to it…constantly stir roast until fragrant and turn golden pink. Once done transfer them to a plate and let cool down to room temperature….

In the same ghee, add almonds. Constantly stir roast until fragrant and turn golden pink. Once done transfer them to a plate and let cool down to room temperature….

Prepare freshly grated nutmeg..

Prepare freshly ground cardamom powder…

Add multigrain flour to the pan… heat still low or a little towards medium..

Add ghee to the flour…stir combine the two…

Add besan (gram flour)…keep stirring..

Once the ghee, multigrain flour, and besan mixture changes color….turns fragrant and well roasted in about 20 minutes…add coarsely ground cashews and almonds to it…

Turn off the heat…add coconut and keep stirring….once coconut turns fragrant….move the pan from the stove…

As soon as the above mixture cools down to good lukewarm temperature….immediately add cardamom, nutmeg, and powdered sugar….give it a good mix, taste, and adjust the sweetness…

At this point we should be able to bind the mixture into a small lemon/lime size ball…

Quickly, shape up equal portions of the mixture into smooth round balls (by pressing and rolling the portions with/in our palm ✋)…

Delectable Multigrain and Gram Flour Laddu are ready to serve or store!
Note: This Multigrain and Gram Flour Laddu teams up great with a cup of warm milk. You may also serve it as a mixture with some fresh plain yogurt. It makes a delicious, and satisfying snack for all ages. These can be stored in an airtight container for two to three weeks.
