Almond Kulfi (Cooked Milk Ice Cream)

Ingredients

  • 6 cups of Whole Milk
  • 1/4 cup Organic Cane Sugar
  • 1/4 cup Almond Powder
  • 1 tbsp. Corn Starch
  • 1/4 tsp. Cardamom Powder
  • 4 to 6 Saffron Strands
Place the milk in a heavy bottom pan

Place the milk in a heavy bottom pan, over medium-high heat. We have to boil and reduce it to 2 cups..

Keep stirring the milk constantly

Keep stirring the milk constantly from the sides and the bottom. Similarly, keep adjusting the heat accordingly between medium and low...

add sugar to it

When the milk reduces to half (means 3 cups), add sugar to it...

Pulse grind a handful of almonds

Pulse grind a handful of almonds..,

Add almond powder to the milk

Add almond powder to the milk...

Combine well

Combine well...

corn starch

Next, take 1 tbsp. of corn starch..

Mix it with 2 tbsps. of water

Add corn starch slury to the milk

Almond Kulfi

Combine well and keep cooking for another 2 to 5 minutes, until reduces to 1/3 of its original amount (from 6 cups to 2 cups). At this point TURN OFF the heat. Keep stirring for a while, and then keep aside to cool down to the room temperature.

Gradually, it will start thickening

After an hour, milk is ready to be filled into the kulfi/popsicle molds.

Carefully, fill in the thickened milk up to the brims of the molds..

Note: Almond Kulfi is one of the most popular summertime desserts. It tastes absolutely delicious. Traditionally, served with rose water, kewra, and falooda. The main difference between a kulfi and an ice cream is cooked/raw milk. There are many other versions of kulfi, such as MANGO KULFI & PISTA KULFI.

  • 1/2 tsp. Vanilla Extract
  • Strawberries 🍓
  • Blueberries 🫐
  • Blackberries
  • Raspberries
Start whipping heavy cream

Start whipping heavy cream, using electric hand mixer...

Add sugar and vanilla extract

Cream after 2 minutes of whipping...add both half the sugar and vanilla extract..

Whip until firm peaks form..

Next, whip the cream cheese in a separate bowl..

Mix the soften cheese with the cream...add rest of the sugar and vanilla extract...

Spread the cream cheese mix on a base of cookie crust (cookies + butter)..

Take a flat bottom and big enough of the pot to be able to accommodate our popsicle stand. Fill in the room temperature water up to the height of the stand. Carefully, place the entire popsicle stand into this pot. Let it sit for just one minute...

Pour/Place the cream, vanilla extract, and sugar in a bowl...

Start whipping the mixture using electric hand mixer...

Cream after 8 minutes on medium-high speed

Cream after 8 minutes on medium-high speed...

Final consistency

Final consistency when it doesn't drop down while turning the bowl upside down...Cover the bowl and set it aside in the refrigerator...

Fruits

While the cream is in the refrigerator...wash the fruits properly...

Pineapple

Make sure to wash your can before opening it up...

Chopped Fruits

Chop the fruits into small pieces...

Grapes

Grapes into halves...

Fruits Cream

Take a serving bowl and gently start folding the fruits in the cream...

Cream and Fruits

One portion of cream and another one of fruits..

Last layer of cream

Last layer of cream...

Mixed Fruit

Final/Top layer of mixed fruits...at this point cling wrap the serving bowl and refrigerate for at least 30 to 40 minutes...

Our fruit cream is ready to serve...

Gently fold the fruit cream from the sides to the center and serve...

Final Fruit Cream

You may top it with almond slivers or caramelized dry fruits and serve immediately!

Note: Instead of dairy-heavy whipping cream, you may also use soy-heavy whipping cream in hot weather. For a perfect result, don’t over or under whip the heavy cream. Try adding sugar in two to three parts to get the desired sweetness.
