Benefits of Cucumber
Cucumber is a very refreshing, nutritious and incredibly versatile fruit (not a vegetable). It has high water content, vitamins, and minerals. Helps in weight loss, and prevents many medical conditions.
Ingredients
- 1 small size ripe Papaya (cut into cubes)
- 2 Persian Cucumbers (sliced)
- 1 n 1/2 cups Baby Spinach
- 1/2 Red Onion (thinly sliced)
- 1 small Green Chili
- 1/4 cup Coconut Chips
- 1/2 Lemon Juice 🍋
- Black-Pepper (as per our preference)
- Himalayan Salt (as per our preference)
- A handful of nuts & seeds (on the side)

In a serving bowl, first make a bed of fresh, crunchy, and green baby spinach or Arugula. Top of it place the mix of papaya, cucumber, and onions. Add green chili, lemon juice, black-pepper, and salt. Finally, garnish it with a generous amount of coconut chips.
Note: The salad was pretty quick and easy to assemble. Coconut chips worked wonderfully in the recipe.
