Healthful Rava Laddu
Ingredients:
- 1 cup Rava or Sooji or Semolina
- 1/2 cup Mixed Dry Fruits (Almonds, Cashew, & Raisin)
- 1/4 to 1/2 cup Coconut Powder
- 3/4 to 1 cup warm Milk
- 1/4 tsp. Cardamom Powder
- A few threads of Saffron
- 1/2 to 3/4 cup grated Jaggery
- 1 tbsp. Ghee

Place the ghee and chopped mixed nuts in a heavy bottom pan, on a low heat…

Roast them for 30 secs. until turn light brown or pink….

Add Rava or Suji, or Semolina to it. Keep stirring on a low heat until the Rava changes its color….

Add coconut powder, cardamom powder, and saffron threads.

Combine well…

Add warm milk to it..

Again, combine this mixture well. Turn off the heat.

Add grated jaggery…

Combine well to get the final mixture ready…

Now take equal portions of the mixture (using an ice cream scoop) …..

Shape up this mixture into a lemon size ball…

Repeat the ball/Laddu making process for all the mixture…

May store these laddu in an airtight container and keep in the refrigerator for almost 10 days…

Our HealthfuRava Laddu are ready to serve!

A Very Festive Radish and Pomegranate Salad

Ingredients
- 1 pound small or medium fresh Okra (Bhindi, Lady Finger)
- 1 to 2 medium Green Chili
- 1/2 Lemon Juice 🍋
- 1 tbsp. Mustard Oil
- A pinch of Asafetida (hing)
- 1/4 tsp. Turmeric Powder
- 1/2 tsp. Red Chili Powder
- 1 tsp. Coriander Powder
- 1/4 tsp. Garam Masala
- 1/2 to 3/4 tsp. Salt

Wash, chop the ends, and cut all okra lengthwise or vertically…

On a high heat, add the mustard oil with the salt. Once smoky, turn off the heat and place the okra into oil. Stir fry for 2 minutes…

Turn on the heat to medium. Add the spices (turmeric, red chili powder, coriander powder)…

Combine the spice and add garam masala…

On a low-medium heat cover the lid and let it cook for 5 to 6 minutes with an occasional stirring…

Our spicy and tangy okra is ready to serve!

Delightful Sweet Potato Halwa
DELIGHTFUL SWEET POTATO HALWA
Ingredients:
- 2 medium Sweet potatoes 🍠
- 2 tsps Sesame Seeds
- 1/3 cup Coconut Powder 🥥
- 1/4 cup Raisins
- 1 cup Milk (warm) 🥛
- 1 to 2 tsps. Organic Cane Sugar (optional)
- A few Saffron Strands1/2 tsp. Cardamom Powder
- 1/4 cup Cashews (chopped)
- 1/4 cup Almonds (chopped)
- 2 to 3 tsps. Ghee (clarified butter)

Boiled Sweet potatoes, coconut, sesame seeds, raisins, cardamom 🍠🥥

Heat 1 tsp. of ghee on a non-stick pan. Adjust the heat to medium. Add the above ingredients (except cardamom powder) to the pan. Keep roasting by constantly stirring/folding the sweet potato mixture…

..until it starts leaving the sides of the pan. It takes about 10 mins.

Now add warm milk to the mixture and keep cooking it for 5 to 8 minutes on a low-medium heat…

..until starts leaving the sides of the pan as before.

May also add 2 tsps. of organic cane sugar, along with the cardamom powder, and saffron. Cook for maximum 5 minutes.

In a separate pan, heat 1 to 2 tsps. of ghee. On a low heat, add the cashews and almonds and stir them until light pink. Turn off the heat and immediately transfer the ready sweet potato mixture to it.

Combine everything properly and our Sweet potato Halwa is ready to serve…

Makhana is also referred as fox nuts or lotus seeds. It is a good source of protein, fiber, and micronutrients (calcium, magnesium, iron, and phosphorus). Supports weight loss, blood sugar management, and heart health.
Also rich in antioxidants and anti-aging properties.
Makhana is quite versatile and easy to enjoy in many different recipes. Sometimes roasted and enjoyed as a savory snack or added to curries, or desserts.
Here, I have shared a very delightful, and traditional recipe of Makhana Kheer.
Ingredients
- 6 cups Whole Milk
- 1 and a 1/2 cup Makhana (Fox Nuts)
- 1 tsp. Ghee (Purified Butter)
- 1/4 cup Organic Cane Sugar
- A few strands of Saffron
- 1/4 tsp. Cardamom Powder
- Pistachio or Almond Slivers for garnishing

Place the milk in a heavy bottom pan on medium heat...let it boil until reduced to 3/4 or 1/2 the quantity...make sure to adjust the heat to low when required and occasional stirring...

Add saffron strands...

Meanwhile, dry roast (or with a tsp. of ghee) makhana on a low heat..constantly stirring for 5 minutes...

Turn off the heat...keep stirring...or transfer to a plate...let them cool to room temperature...

Pulse grind makhana into a coarse powder...

Keep it aside for later use…

Prepare some fresh cardamom powder...

Fresh cardamom powder...

Reduced milk....

Add makhana to the milk...

Combine well...

Let it cook on low heat for another 10 to 15 minutes..

Finally, add sugar and cardamom powder...combine well...turn off the heat...

Garnish with pistachio...serve hot or at room temperature!

Note: Makhana Kheer is very easy to create. Heavy bottom pan, proper heat adjustments, and constant stirring are important. For a variation, I sometimes add the whole makhana instead of grinding them. Here, I would also like to mention that makhana is an excellent source of several important nutrients, and micronutrients.

To celebrate the auspicious festival of Ganesha Chaturthi, here I am sharing the recipe of a super nutritious and delicious Finger Millets And Jaggery Modak or Ragi Laddu.
In comparison to any other grain, finger millets are the best non-dairy source of calcium. It is also a rich source of natural iron. Hence, these Ragi Modak makes a perfect snack for the kids, especially during the festive season.

🌹🙏🌹 Shri Ganeshaya Namah 🌹🙏🌹



Ingredients
- 1 cup Jaggery (grated)
- 1/4 cup Water
- 4 to 5 Cardamoms
- 1/4 to 1/2 Nutmeg
- 1 cup Coconut 🥥
- 1 tbsp. Raisins
- 1 tbsp. Almonds
- 1 tbsp. Walnuts
- 1 tbsp. Cashews

Fresh or Dried Coconut 🌴 🥥

Freshly Grated Nutmeg

Place the cardamom, nutmeg, and coconut in a blender jar. Grind the mixture into a coarse powder.

Keep the coarsely ground coconut mixture aside for later use.

In a heavy bottom pan, on a low-medium heat, add ghee and the finger millet flour…

Keep roasting it with a constant stirring, until fragrant (10 to 15 mins)…

Add the coconut mixture and stir roast for another 2 to 3 minutes…

Combine well..

Grind the toasted nuts (except raisins)…

Add the nut powder and raisins to the flour mixture..

To make a one string jaggery syrup, take 2/4 cup of water..

Add the jaggery to the warm water on a low heat..,

Let it cook for a couple of minutes..

Turn of the heat as soon as the syrup reaches into one-string consistency…

Add the jaggery syrup to the finger millets mixture and combine well with the help of a spatula…

Once the mixture gets little cooler, start binding the dough into small Laddu or Modak. Our Finger Millets Laddu are ready for celebration!
Note: These Finger Millets Laddu turned out very delicious. Binding part is a bit challenging, as the laddu mixture has to be warm enough. An extra ghee, jaggery, or milk helps creating the Laddu much faster. Teams up great with a cup of milk.

Once the mixture gets little cooler, start binding the dough into small Laddu or Modak. Our Finger Millets Laddu are ready for celebration!

Rice Pudding | Kheer
Rice pudding is simply raw rice cooked in sweetened milk. As the rice cooks, it lets off starch that thickens the milk and suspends the tender grains of rice, contributing to its creaminess.
Traditionally, it is started with uncooked rice. Whereas, to cut short the cooking-time, it can also be started with the leftover cooked rice.
A serving of rice pudding is like a warm hug on a special day. As it’s a fragrant, creamy, and pleasantly sweet dessert. Here’s how to make the easiest rice pudding, the one that we use over and over again.
Further, we can customize it in a number of interesting ways.
Ingredients
- 4 cups Whole Milk
- 2 to 3 tbsps. Basmati Rice
- 2 tbsps. Organic Cane Sugar
- 2 pods of Cardamom
- 4 to 6 Saffron Strands
- 1/4 cup Coconut Ribbons
- 12 to 15 Raisins
- 6-8 Almonds
- 2 to 4 Pistachios
- 1/2 inch Cinnamon Stick
- A few drops of Rose Water 🌹

Place the milk in a heavy bottom pan, over low-medium heat to bring it to boil…

Soak the rice in water for 15 minutes..

Soak the coconut ribbons, raisins, almonds in water for 1/2 hour (until our kheer cooks well)…

Wash and soak the cinnamon stick as well…..

Once the milk comes to boiling or boils, add rice to it, and let it simmer on low heat. Make sure to keep stirring-scratching from the bottom and sides of the pan…

Rice will pretty much blend with the milk in 20 minutes..at this point add the soaked cinnamon stick, coconut and raisins to the kheer.. Let it simmer for another 10 mInutes and turn off the heat. Meanwhile, peel and chop the soaked almonds. Add these almonds and sugar to the kheer and combine well. Let the kheer cool down to room temperature and then add rose-water..

Serve the rice pudding into dessert bowls..

Garnish with pistachios and our rice pudding or kheer is ready to serve!
Note: Rice Pudding or Kheer is very easy to create, using only three basic ingredients. Milk, rice, and sugar! Rest of the ingredients are completely optional for an enhanced nutritional value, textures, and flavors. Adjustment of heat and stirring parts are really very important.

Lentils Kachori
Lentils Kachori
Kachori are quite popular on an Indian festive menu. Depending upon the fillings, kachori can be of many different types. Such as onion, paneer, green peas, dry fruit, masala, potato, and lentils.
The lentils kachori are protein packed, taste yummy, and have a good shelf-life.
The recipe originated from a trade and commerce oriented community in India. Great to pack and enjoy while traveling!
Ingredients
- 3 cups Multigrain Flour
- 1 cup Moong
- 1-inch piece of Ginger
- 1 medium Green Chili
- 1/4 tsp. Asafetida (Hing)
- 1/4 tsp. Mango Powder (Amchur) Optional
- 1/2 tsp. Red Chili Powder
- 1/2 tsp. Garam Masala
- 1/2 tsp. Cumin Powder
- 1 tsp. Coriander Powder
- 1/2 tsp. Salt
- 2 tsps. Ghee or oil (optional)
- Oil for frying

Soak the skinned & split green lentils (moong Dal) in water for 2 hrs. or overnight..

Place the drained lentils in a blender jar, add ginger, and green chili..

Pulse grind for 2 to 3 times..

Feel free to add up to 1/4 cup of water as we are going to knead the dough with it…

Place the ingredients in a wide bowl or kneading bowl..

Knead the above ingredients into a smooth and soft Kachori dough…

Cover the dough and let it rest for 15 to 20 minutes…

Divide the dough into equal portions and roll them into round kachori..

Simultaneously, heat the oil to medium-high and start frying the Kachori. These lentils kachori take little longer than the other ones..

Served the lentils Kachori with the traditional spicy tomato-potato curry!
Note: This is a very easy way to create lentils Kachori. Traditionally, the lentils mixture is stuffed in each dough portion, but here we have combined the lentils with the flour to prepare the dough.
Usually, served with raita (a yogurt recipe), pumpkin curry, tomato-potato curry, pickle, and a basic salad. Again, with the same dough we can create our regular Paratha or Roti as well.

The festival of Raksha Bandhan is a symbol of pious love and protection between a brother and his sister. It is observed all over the world with great pomp and show.
A sister ties rakhi or amulet on the wrist of her brother. Wishing a very happy and long life to her brother. On the other hand, her brother promises to be with her in all thick and thins. He makes her sister happy by giving her some beautiful gifts.

Ready to celebrate the auspicious festival of Raksha Bandhan 🥰

Rakhi Celebration 🎉
Ingredients
- 1 cup Semolina
- 4 cups Warm Water (or Milk)
- 3/4 to cup Organic Cane Sugar
- 3 to 4 tbsps. Ghee
- A handful of Mixed Nuts
- (almonds, raisin, coconut)
- 1/4 tsp. Cardamom Powder
- 4 to 6 Saffron Threads

In a heavy bottom pan, roast the nuts, raisins, and coconut chips on a very low heat. Once done, keep them aside in a bowl for later use…

In the same pan, roast semolina on a low heat, constantly stirring it until fragrant and turns light brown…

Well roasted semolina or sooji or rava…

Add all the nuts to semolina..,

Add warm water, cover the lid, and let it cook on a low-medium heat..

Semolina absorbs the water very quickly, at this point add sugar, combine well, cover and again let it cook on a low heat..

Once sugar is well absorbed, add cardamom powder, combine well and it’s ready to serve..,

Serve and top it with some almonds slivers..

Our Semolina Halwa is ready to enjoy!
Note: Homemade Semolina Halwa or Sooji Halwa, or Rava Halwa is also a very easy, quick, and wholesome recipe to create at any auspicious occasion. Today, I have created it to celebrate the beautiful festival of RAKSHA BANDHAN 🎊

- 1 cup Semolina
- 4 cups Warm Water (or Milk)
- 3/4 to cup Organic Cane Sugar
- 3 to 4 tbsps. Ghee
- A handful of Mixed Nuts
- (almonds, raisin, coconut)
- 1/4 tsp. Cardamom Powder
- 4 to 6 Saffron Threads
Instructions
In a heavy bottom pan, roast the nuts, raisins, and coconut chips on a very low heat. Once done, keep them aside in a bowl for later use…
In the same pan, roast semolina on a low heat, constantly stirring it until fragrant and turns light brown…
Well roasted semolina or sooji or rava…
Add all the nuts to semolina..,
Add warm water, cover the lid, and let it cook on a low-medium heat..
Semolina absorbs the water very quickly, at this point add sugar, combine well, cover and again let it cook on a low heat..
Once sugar is well absorbed, add cardamom powder, combine well and it’s ready to serve..,
Serve and top it with some almonds slivers..
