Spicy Vegetable Pulao
Vegetable Pulao is an aromatic, flavorful, and spicy rice recipe created by cooking rice along with a combination of spices, and vegetables. The recipe is pretty quick and easy to prepare. First of all the ingredients are sautéed in little to a generous amount of oil or ghee and then cooked with water exactly like the plain rice. The recipe can be cooked in a regular pan, rice cooker, instant pot, or pressure cooker.
Sometimes people want to know the difference between a pulao and biryani. The basic difference between the two – pulao is created through the absorption method. I mean the water is completely absorbed by the rice, and vegetables. Whereas, in case of vegetable biryani, the rice is par-boiled in water, completely drained, and then used in the recipe.
Ingredients
- 1 and a 1/2 cups Basmati Rice
Veggies:
- 1/2 to 1 inch Ginger
- 2 to 4 cloves of Garlic
- 1 large Red Onion
- 3 medium Tomatoes
- 1 to 2 medium Green Chili
- 2 medium Potatoes
- 1/2 cup Green Peas
- 1 medium Bell Pepper 🫑
- 1 tbsp. Lemon Juice 🍋
- 1/4 to 1/2 cup Fresh Coriander
Spices:
- 2 Bay Leaves
- 4 to 6 Whole Black-Pepper
- 2 to 4 Cloves
- 1/2 inch Cinnamon Stick
- 1/4 tsp. Hing (Asafetida)
- 2 Whole Red Peppers
- 1 tsp. Cumin Seeds
- 1/2 tsp. Turmeric Powder
- 1 tsp. Red Chili Powder
- 1 to 2 tsp. Coriander Powder
- 1 tsp. Kasturi Methi
- 2 to 3 tsp. Pav Bhaaji Masala
- 1/2 tsp. Garam Masala
- 2 tsp. Salt
- 2 tbsps. Ghee (purified butter)

Thawed Frozen Green Peas

Veggies (to be chopped)...

Chopped tomatoes 🍅 🍅 🍅

Finely grated/chopped ginger, garlic, onion, bell pepper, green chilli, coriander....small pieces of potatoes..

Rice (soaked in water for about 15 minutes)

Place a heavy bottom pan on medium-high heat..start seasoning with ghee and the whole spices ..

Saute garlic, ginger, onions, and green chillies until translucent..

Next...add potato, green peas, and bell pepper

Add the spices turmeric, chili powder, coriander powder, and some salt....stir cook for a while..

Add tomatoes....

Kasturi Methi, Pav Bhaji Masala, Garam Masala, and cook until tomatoes are well done..

Add rice and gently stir cook with the veggies...

When the rice is combined well with the veggies and spices like above.,,

Add little less than 3 cups of warm water (for 1 n 1/2 cup rice). When the water starts boiling, adjust the heat to medium, cover the lid, and let cook for 5 minutes... Turn off the heat.

Let the pulao sit on the same stove...add lemon juice, chopped coriander and it's ready to serve!

Note: This is a very easy and flavorful veggie rice. May add more of the veggies of our choice, such as cauliflower, carrots, green beans, etc. May substitute potatoes with paneer, or soya chunks. Served with cucumber raita, green chutney, salad, and papad.
