Though Chia seeds are very small in size, but are full of important nutrients. The seeds belong to a flowering plant in the mint family.

We must try to incorporate Chia Seeds in our food. As these are an excellent source of omega-3 fatty acids, rich in antioxidants, dietary fiber, iron, and calcium.

It raises HDL or good cholesterol and is heart healthy.

Ingredients

  • 2 medium Mangoes (Sweet & flavorful) 🄭
  • 2 tbsps. Chia Seeds
  • 2 cups Milk (Regular/Coconut/Almond) 🄄
  • No Sugar ( any sweetener of our preference, if required)

Rice Pudding | Kheer

Rice pudding is simply raw rice cooked in sweetened milk. As the rice cooks, it lets off starch that thickens the milk and suspends the tender grains of rice, contributing to its creaminess.

Traditionally, it is started with uncooked rice. Whereas, to cut short the cooking-time, it can also be started with the leftover cooked rice.

A serving of rice pudding is like a warm hug on a special day. As it’s a fragrant, creamy, and pleasantly sweet dessert. Here’s how to make the easiest rice pudding, the one that we use over and over again.

Further, we can customize it in a number of interesting ways.

Ingredients

  • 4 cups Whole Milk
  • 2 to 3 tbsps. Basmati Rice
  • 2 tbsps. Organic Cane Sugar
  • 2 pods of CardamomĀ 
  • 4 to 6 Saffron Strands
  • 1/4 cup Coconut Ribbons
  • 12 to 15 RaisinsĀ 
  • 6-8 AlmondsĀ 
  • 2 to 4 PistachiosĀ 
  • 1/2 inch Cinnamon Stick
  • A few drops of Rose Water 🌹 
Place the milk in a heavy bottom pan, over low-medium heat to bring it to boil…

Once the milk comes to boiling or boils, add rice to it, and let it simmer on low heat. Make sure to keep stirring-scratching from the bottom and sides of the pan…

Rice will pretty much blend with the milk in 20 minutes..at this point add the soaked cinnamon stick, coconut and raisins to the kheer.. Let it simmer for another 10 mInutes and turn off the heat. Meanwhile, peel and chop the soaked almonds. Add these almonds and sugar to the kheer and combine well. Let the kheer cool down to room temperature and then add rose-water..

Serve the rice pudding into dessert bowls..

Broccoli has long been considered as a superfood. I mean, one of the healthiest veggies because of its nutritional makeup.

It is high in dietary fiber, thus excellent for detoxification, weight loss, and our gut health. Great for skincare, eye health, and is anti-aging.

Broccoli has powerful antioxidants to fight cancer, and vitamin C to aid in iron absorption.

Due to the presence of calcium, and vitamin K, broccoli is also good for bone health.

Rest it helps reducing cholesterol, inflammation, allergic reactions.

Salads are one good way to incorporate broccoli into our diet.

Ingredients

  • Salad:
  • 2-3 cups Lettuce & Romaine Hearts 🄬
  • 2 cups Broccoli Florets 🄦 
  • 1 cup Cherry Tomatoes šŸ…
  • 2 Persian Cucumbers šŸ„’Ā 
  • 2 small Oranges šŸŠ
  • 2-4 tbsps. Homemade Paneer
  • Salad Dressing:

Salads are a rich source of dietary fiber. Which is excellent for our gut health.

We get the maximum nutritional benefits of the fresh fruits and vegetable used in our salads.

Salads are very helpful in weight loss or management.

Nuts and seeds aid our intake of healthy fats.

Cheese, paneer, or beans add the protein content to our salads. Great to improve our body muscles, and heart health.

Now, adding Ā salad dressing to a salad increases the absorption of certain nutrients being consumed.Ā 

The fat in salad dressing helps absorb key nutrients such as lycopene and alpha- and beta-carotene.

People who eat salads, salad dressing, and raw vegetables are more likely to meet recommended intakes for vitamins C, E and folic acid.

Consumption of as little as one serving of salad or raw vegetables per day is significantly associated with the likelihood of meeting the recommended nutrient intakes of each of vitamins A, E, B6, and folic acid.

Kachori are quite popular on an Indian festive menu. Depending upon the fillings, kachori can be of many different types. Such as onion, paneer, green peas, dry fruit, masala, potato, and lentils.

The lentils kachori are protein packed, taste yummy, and have a good shelf-life.

The recipe originated from a trade and commerce oriented community in India. Great to pack and enjoy while traveling!

Ingredients

  • 3 cups Multigrain Flour
  • 1 cup MoongĀ 
  • 1-inch piece of Ginger
  • 1 medium Green Chili
  • 1/4 tsp. Asafetida (Hing)
  • 1/4 tsp. Mango Powder (Amchur) OptionalĀ 
  • 1/2 tsp. Red Chili PowderĀ 
  • 1/2 tsp. Garam MasalaĀ 
  • 1/2 tsp. Cumin Powder
  • 1 tsp. Coriander Powder
  • 1/2 tsp. Salt
  • 2 tsps. Ghee or oil (optional)
  • Oil for frying
Soak the skinned & split green lentils (moong Dal) in water for 2 hrs. or overnight..

Usually, served with raita (a yogurt recipe), pumpkin curry, tomato-potato curry, pickle, and a basic salad. Again, with the same dough we can create our regular Paratha or Roti as well.

Wheat Flour Cookies 🌾

Homemade cookies, cakes, and other sweets have a number of health benefits over store bought items.

Reason, here we have our own control on everything. The quality, and quantity of flour, sugar, and fat is in our hands.

For example, most of the time I replace the fine flour with the multigrain or wheat flour. White sugar with the organic cane sugar, brown sugar, jaggery, dates, and raisins. Fat with pure ghee, virgin coconut oil, or yogurt etc.

I prefer enriching my recipes with a good amount of fruits, or dry fruits.

Further, we can completely eliminate artificial colors, flavorings, and preservatives from our recipes.

With all the shortcuts and easy recipes, baking doesn’t take as long as we think!

Ingredients

  • 1 cup Wheat Flour
  • 1/2 to 1/3 cup Organic Cane Sugar (Powdered)
  • 1/2 cup Ghee
  • 10-15 Almonds
  • 3-4 Cardamom PowderĀ

Combine the ingredients together (using a whisker/hand) to form a soft dough. Keep the dough aside for 5 to 10 minutes...

Divide the cookie dough into nine equal portions. Shape these portions into round balls, and then press between the palms to form little discs. Top these discs with some almond pieces. Finally, place on a baking tray lined with a parchment paper. Now the cookies are ready to bake…

Preheat the oven on 355 degrees F (180 degrees C) and place the baking tray on the lower rack of the oven. Cookies will be done under 12 to 15 minutes. Take out the tray from the oven as soon as the cookies start turning light pink from its base…

The festival of Raksha Bandhan is a symbol of pious love and protection between a brother and his sister. It is observed all over the world with great pomp and show.

A sister ties rakhi or amulet on the wrist of her brother. Wishing a very happy and long life to her brother. On the other hand, her brother promises to be with her in all thick and thins. He makes her sister happy by giving her some beautiful gifts.

  • 1 cup Semolina
  • 4 cups Warm Water (or Milk)
  • 3/4 to cup Organic Cane Sugar

  • A handful of Mixed Nuts
  • (almonds, raisin, coconut)
  • 1/4 tsp. Cardamom Powder
  • 4 to 6 Saffron Threads
In a heavy bottom pan, roast the nuts, raisins, and coconut chips on a very low heat. Once done, keep them aside in a bowl for later use…

Meethi Sewai 😊

Raksha Bandhan, also abbreviated to Rakhi, is celebrated on the full moon in the month of Sravana (July/August) in the lunar calendar. The word Raksha means protection, whilst Bandhan means to tie.

This festival celebrates the love of a brother for his sister. On this day, sisters tie rakhi on the wrists of their brothers to protect them against evil influences, and pray for their long life and happiness. They in turn, give a gift which is a promise that they will protect their sisters from any harm. Within these Rakhis reside sacred feelings and well wishes. This festival is mostly celebrated in North India.

The history of Rakshabandhan dates back to Hindu mythology. As per Hindu mythology, in Mahabharata, the great Indian epic, Draupadi, wife of the Pandavas had torn the corner of her sari to prevent Lord Krishna’s wrist from bleeding (he had inadvertently hurt himself). Thus, a bond, that of brother and sister developed between them, and he promised to protect her.

  • 4 cups Whole Milk
  • 4-6 Ā tbsps. Baked Vermicelli (or Sewai)
  • 2 tbsps. Organic Cane Sugar
  • 4-5 Saffron Threads
  • 1-2 tbsps. Mixed Dry Fruits
  • (almonds, raisins, pistachios, cashews)
  • 1/4 tsp. Cardamom Powder
  • 1/2 tsp. Rose Water
Place the milk in a heavy bottom pan on a low-medium heat. Bring the milk to rolling boil.

Add Vermicelli

Add vermicelli, and saffron, nuts, cardamom powder, sugar, and keep stirring for 5 mins. on a low heat. Turn off the heat and put the pan away from the stove or keep stirring it occasionally, so that the milk doesn’t stick to the bottom.

Meethi Sewai

Let it cool down a little bit, add rose water, give a gentle stir and serve into a bowl. Garnish with some dry fruits and it’s ready to eat!
