INTERESTING PANEER PAKORA WAFFLE
Paneer pakora is a popular North Indian deep-fried snack, with a crispy outer layer of spicy gram flour batter and a soft-moist paneer slice inside.
There are many other versions of the same using bread slices, potato filling, chutneys etc. All are deep-fried.
Here, I‘ve created the basic version of it with No Oil or a very little oil to grease the waffle maker plate. These waffles are a must try. So very easy and interesting to kids. These make an excellent breakfast or evening snack or lunch box recipe.
Ingredients
- 1 cup Gram Flour
- 4 Paneer Slices (about 2 mm. of thickness)
- 1/4 tsp. Carom Seeds
- 1/4 tsp. Turmeric Powder
- 1/4 tsp. Red Chili Powder
- A pinch of Asafetida
- 1 medium Green Chili (finely chopped)
- 1 tbsp. Fresh Coriander Leaves (finely chopped)
- Salt (as per our preference)
- About 1/2 cup of water (to prepare a batter of pouring consistency)
- 1 to 2 tsps. Olive Oil to grease the waffle or waffle maker plate (optional)

Gramflour Batter

Homemade Paneer Slices

Preheat the waffle maker.

May or may not grease the waffle plate.

Pour about 1 tbsp. of gram flour batter.

Place a paneer slice on top of it.

Top it again with 1/2 tbsp. of gram flour batter.

Close the waffle maker for 3 to 4 minutes.

Golden brown top side of the waffle.

Similarly, well-done bottom side of the waffle.

Our delicious spicy paneer pakora waffle is ready to serve.

Served with tomato ketchup and fresh coriander-mint chutney.
Notes: My family loved it like anything. Decent size, delicious, and satisfying with a tiny amount of oil. Served hot with Maggi Tomato Ketchup and Fresh Coriander-Mint Chutney.

DELIGHTFUL LAUKI RAITA OR BOTTLE GOURD YOGURT
Lauki Raita or Bottle Gourd Yogurt is a very healthful side dish. It is easy to create using fresh yogurt, boiled bottle gourd, and a few common spices.
It‘s low in calories, hydrating, and rich in fiber. Great for weight loss and digestion. Goes well with rice preparations and/or any kind of Indian meal.
Ingredients
- 1 small Lauki or Bottle Gourd
- 1 and 1/2 cup Fresh Plain Yogurt
- 1/4 tsp. Black Salt
- 1/4 tsp. Salt
- 1/4 tsp. Roasted Cumin Powder
- Seasoning:
- 1 tsp. Olive Oil
- 1 pinch Asafetida
- 1/4 tsp. Cumin Seeds
- A good pinch of Red Chili Powder

Wash the bottle gourd.

Using a peeler, peel the bottle gourd. Then carefully, grate it on a plate.

Grated bottle gourd.

Place the grated bottle gourd in a steel or heavy bottom pan. Add 1 tbsp. of water. Adjust the heat to low-medium. Cover the lid and let it cook for 10 minutes until nice and tender.

Transfer the cooked bottle gourd to a bowl. Let it completely cool down to room temperature.

Add it to the plain yogurt.

Gently, combine them together.

Add black salt, salt, roasted cumin powder, and the seasoning. To prepare the seasoning, heat the oil and add Asafetida, cumin seeds, and red chili powder.

Mix well and it’s ready to serve. We may also refrigerate it for 20 to 30 minutes before serving it in summertime.

Notes: Lauki Raita is a summer special yogurt recipe. Very soothing and comforting to the gut. Apart from bottle gourd, black salt, and roasted cumin powder imparts an absolutely delightful flavors to it.
Today, I served it with Rajma or Kidney beans curry, and mixed cabbage curry. I personally like this Raita with the freshly cooked Basmati rice.
Sometimes, I season it with asafetida, mustard seeds, curry leaves, and whole red pepper.

DELICIOUS KALA CHANA OR BLACK CHICKPEAS
DELICIOUS KALA CHANA OR BLACK CHICKPEAS
Black Chickpeas or Kala Chana is an incredible source of vitamins like B6, C, folate, niacin, thiamin, riboflavin and minerals including manganese, phosphorus, iron and copper.
The wealth of nutrients in Kala Chana is beneficial in boosting the immune system, promote muscle mass, regulates diabetes and enhance hair, skin and nail health.
Here, I am creating a very easy breakfast recipe from it.
Ingredients
- 1 cup Boiled Kala Chana (Black Chickpeas)
- (overnight soaked in water)
- 1 to 2 tsps. Olive Oil
- A good pinch of Asafetida
- 1/2 tsp. Cumin Seeds
- 1/4 inch piece of Ginger (finely chopped)
- 1/2 to 1 medium Red Onion (chopped)
- 1 to 2 medium Green Chilies
- 1/4 tsp. Red Chili Powder
- 1/2 to 1 tsp. Coriander Powder
- 1/4 to 1/2 tsp. Garam Masala
- 1/4 to 1/2 tsp. Pink Salt
- 1 to 2 tbsps. Fresh Coriander Leaves
- 1 Fresh Lemon (Juice)

Get the seasoning ready… Heat the oil on medium, add Asafetida, cumins. Sauté in ginger, onion, and green chilies.

Add boiled black chickpeas, red chili powder, coriander powder, and salt to it. Cover the lid. Let it cook on low heat for 5 minutes.

Open the lid. Add garam masala, and some fresh coriander leaves. May also add lemon juice. Combine well and it’s ready to serve.

We may also serve Kala Chana with an extra lemon wedge.
Notes:
Kala Chana or Black Chickpeas is one of our family favorite breakfasts. It makes a perfect breakfast or snack for all ages.
Sometimes, I prepare it as a Salad or Chaat as well. Simply, toss boiled black chickpeas with chopped cucumber, tomato, onions, green chilies, coriander, lemon juice, and salt.

Indian restaurants, serve it with Sooji or Rava Halwa or Sheera and Puri.

RED RADISH N ITS GREENS
Radish is an edible vegetable root with a pungent, sweet taste. Because of the presence of a wide variety of nutrients, radish makes an ideal dish for raw and cooked consumption. Some of the benefits of eating radish include good digestion, and weight loss.
Radish leaves are loaded with calcium, iron, folic acid, phosphorous, and vitamin C, which help manage many body functions. In addition, the high fiber of radish leaves helps relieve constipation. These leaves increase immunity, reduce fatigue, and act as a diuretic too.
Ingredients
- 2 bunches Red Radish
- 1 tsp. Olive Oil (for seasoning)
- 1/4 tsp. Fenugreek Seeds
- 1/2 tsp. Carom Seeds
- 1/4 tsp. Turmeric Powder
- 1/4 tsp. Red Chili Powder
- 1/4 tsp. Pink Salt

Fresh bunches of gorgeous red radishes.

Separated and nicely washed radish greens.

Radishes to be trimmed, washed, and chopped.

Chopped radishes and its greens.

In a wide pan, on a low-medium heat, season the radishes in olive oil, fenugreek seeds, carom seeds, Asafetida, turmeric, and red chili powder.

Increase the heat to medium or medium-high. Start mixing radishes into the seasoning

Keep stirring the radishes until slightly done.

Finally, add the chopped radish greens. Give a quick stir on medium-high heat and its ready to serve.

Super yummy radish n its greens are ready to serve as a side or warm salad.
Notes:
Radish is one of my most favorite root vegetables. Plus so many precious memories associated with it. I remember my dad picking up, washing, and eating the whole white carrot from the fresh vegetables basket (whenever he is off from his work).
Again, the day I was leaving for US from India, my mom asked me for my favorite recipe. I asked for radish and she made it along with bottle gourd or Lauki or Ghiya Kofta, and and my most favorite Cucumber Raita or yogurt.
The recipe is very easy to create. Only the cleaning, washing, and chopping takes it own time.

GREEN LENTILS N THIN CRUST PERSONAL PIZZA
Why pizza is called pizza?
Some etymologists suggest it is related to the Lombardic word bizzo or pizzo, which means mouthful, and is related to the English word bite.
Ingredients
- 1/2 cup Split or Whole Green Lentils Batter
- (soaked, and grinded with ginger, green chili, turmeric, cumins, asafetida, and salt into a slightly coarse paste).
- 4 tbsps HEKKA Tomato Sauce
- 1/4 medium Red Onion (finely chopped)
- 1/4 small Yellow Bell Pepper (diced)
- 1 tbsp. Fresh Coriander Leaves (finely chopped)
- 1/4 Green Chili (optional)
- A good pinch of Black Pepper Powder

HEKKA Tomato Sauce!

Finely chopped veggies 🧅🫑

Green lentils batter

Pour and spread about a half cup of batter on a nonstick pan, over medium heat.

Spread the veggies (onion, bell pepper, and coriander) on top of the lentils pizza base.

Using an extra batter, make the veggies stick to this lentil pizza base.

Turn the well-done, crisp, and golden lentils pizza base upside down.

Apply a good amount of Tomato Sauce 🍅

Spread the veggies evenly on top of the tomato sauce.

Finally, the grated Parmesan cheese 🧀

Cover the lid, adjust the heat to low, and let it cook for about 3 to 5 minutes.

After 5 mins, open the lid, and our melt-in-the-mouth Personal Pizza is ready to serve.

Here, it makes a perfect meal! 😊

For an extra crispness, we may try adding a little rice flour to the green lentils batter. Also, we may always use a variety of veggies and/or spices of our choice. For example, broccoli 🥦 is one of my favorites.

DELICIOUS AND EARTHY WHOLE RED LENTILS | SABUT MASOOR DAL | SOUP
Masoor dal is the same thing as red lentils, quite popular and easy to find in most of the grocery stores. These are pretty economic and cook fast, making them a great choice for a simple weekday meal.
Masoor Dal is considered good for the heart as it helps to lower cholesterol and blood pressure levels. It contains dietary fibers as well as proteins which helps in maintaining normal blood pressure. It is also a good source of folate which reduces the risk of heart diseases.
Ingredients:
- 1 cup Whole Red Lentils
- 1/4 to 1/2 tsp. Turmeric Powder
- 1/2 tsp. Salt
Seasoning: - 2 tsps. Olive Oil
- 1/2 tsp. Cumin Seeds
- 2 Whole Red Peppers
- A good pinch of Asafetida (hing)
- 2 cloves of Garlic (finely chopped or minced) 🧄
- 1/2 to 1 inch Ginger (finely chopped)
- 1 medium Red Onion (finely chopped)
- 1/4 tsp. Turmeric Powder
- 1/2 to 3/4 tsp. Red Chili Powder
- 2 medium Tomatoes (finely chopped)
- 1 to 2 medium Green Chilies (finely chopped)
- A few springs of Fresh Coriander (finely chopped)
- 1/4 to 1/2 tsp. Garam Masala
- 1 tsp. Salt
- 1 tsp. to 2 tsps. Ghee (completely optional)

Red Lentils soaked in water for 30 minutes to an hour.

Pressure cook the soaked lentils with turmeric powder and salt. On a high heat, wait for the first pressure cooker whistle. Set the heat on low-medium and let it cook for 5 minutes. Turn off the heat and let the air pressure release of its own. Open the cooker lid.

Perfectly, cooked or boiled Red Lentils (It’s ready to eat even at this stage).

Prepare the ginger, garlic, onion, green chili, and tomato seasoning.

Cover the lid. Adjust the heat to low. Let the tomatoes cook completely.

Add the pressure cooked red lentils to the tomato seasoning.

Add garam masala and fresh coriander. Simmer it for another 2 to 5 minutes.

Super delicious Red Lentils or Masoor Dal is ready to serve.

Notes:
We can always adjust the consistency of the cooked Red Lentils by adding warm water or milk. As it has a tendency to thicken very fast.
Apart from tomatoes, sometimes I cook this Dal with raw mango, or tamarind paste.
It is served with mango pickle or mint-mango chutney, Papad, and onion, green-chili-lemon Salad. 🧅🌶🍋
The leftovers can be served with layered Paratha.

DELICIOUS FIVE LENTILS DAL | PANCHMEL DAL | PANCHRATNA DAL | SOUP
Five Lentils Dal is also known as panchmel, or panchratna dal. It is a protein-packed lentil recipe which contains the goodness and nutritive qualities of 5 different lentils or dals. It is not only wholesome but also very delicious. This hearty and nutritious recipe comes from North India and can be made with or without onion and garlic.
Ingredients:
- 1 tbsp. Yellow Lentils (Toor, or Arhar Dal)
- 1 tbsp. Whole Red Lentils (Sabut Masoor Dal)
- 1 tbsp. Split Black Lentils (Urad Dal)
- 1 tbsp. Gram Lentils (Chana Dal)
- 1 tbsp. Green Lentils (Moong Dal)
- 1/4 tsp. Turmeric Powder
- 1/2 tsp. to 1 tsp. Salt
- Seasoning:
- 2 tsps. Olive Oil
- 1/2 tsp. Mustard Seeds
- 1/2 tsp. Cumin Seeds
- 6 to 8 Fresh Curry Leaves
- 2 Whole Red Peppers
- A good pinch of Asafetida (hing)
- 2 cloves of Garlic (finely chopped or minced) 🧄
- 1/2 to 1 inch Ginger (finely chopped)
- 1 medium Red Onion (finely chopped)
- 2 medium Tomatoes (finely chopped)
- 1 to 2 medium Green Chilies (finely chopped)
- A few springs of Fresh Coriander (finely chopped)
- 1/4 to 1/2 tsp. Garam Masala
- 1 tsp. to 2 tsps. Ghee (completely optiona)

Nicely rinse the five lentils mixture.

Soak it in water for 30 mins to an hour

Boil it for 5 minutes in pressure cooker with turmeric and salt.

Keep the boiled dal aside.

Prepare the seasoning in a separate pan, on a medium heat.

Add tomatoes, cover the lid, and let it cook on low-medium heat, until nice and tender.

Add all spices (red chili powder, turmeric, and salt) and stir for 5 secs.

Time to add the pre-boiled Dal to it.

Adjust the consistency by adding some warm water.

Cover the lid, and let it simmer. Add garam masala, ghee, fresh coriander, and combine well. Our Five Lentils or Panchmel or Panchratna Dal is all set to serve.

It goes equally good with the homemade chapati, roti, or phulka
Though the ghee makes it much tastier but we can always substitute it by sprinkling some homemade dry spicy masala. Incorporating an interesting simple side salad.

MAGICAL CHIA SEEDS LEMONADE
Chia seeds belong to a flowering plant in the mint family. Despite their small size, the seeds are packed with a variety of nutrients.
Chia seeds are an excellent source of omega-3 fatty acids. Rich in antioxidants, fiber, iron, and calcium. These are heart healthy and helps raising the HDL cholesterol (the “good” cholesterol).
Ingredients:
- 1 cup Luke Warm Drinking Water
- 1 tbsp. Chia Seeds
- 1/2 Fresh Lemon Juice 🍋
- 1 tbsp. Honey 🍯

Take a cup of lukewarm water.

Add chia seeds to it.

Followed by the fresh lemon juice 🍋

Lastly, goes the honey into it 🍯

Using a spoon or stirrer, combine the ingredients well for 1 to 2 mins.

Chia seeds will start absorbing the water to form a sort of jelly around them. The magical chia seeds lemonade is ready to drink.

The chia seeds work magically in weight management. It’s an excellent idea to start our day with this chia seeds lemonade. It keeps us full for a longer time and inspires to stick to healthy food, all day long.

HOW TO MAKE THE BEST EVER GUACAMOLE
Guacamole is an avocado-based dip, spread, or salad. The recipe was first developed in Mexico. In addition to its use in Mexican cuisines, it has become a part of modern international cuisines.
The guacamole recipe is super easy and quick to create In our own kitchens.
Ingredients:
- 2 medium Avocados (firm but perfectly ripened)
- 1 medium Red Onion
- 1 large Tomato
- 1 to 2 medium Green Chili
- 2 Garlic Cloves (finely chopped or minced)
- 1/2 to 1 Fresh Lemon Juice
- A handful of Fresh Coriander (finely chopped)
- 1/2 tsp. Freshly Ground Roasted Cumin Powder
- 1/4 to 1/2 tsp. Red Chili Powder
- 1/4 tsp. Red Chili Flakes
- 1/4 to 1/2 tsp. Oregano
- 1 tsp. Brown Sugar (optional)
- 1/2 to 3/4 tsp. Pink Salt

Nicely wash and place all the fresh ingredients at one place.

Dry roasted cumins to be grinded into a coarse powder.

Here’s an important point -chop all the veggies prior to avocados 🥑

We will cut the avocados later when every other thing is ready. This is to prevent it from oxidation, meaning turning it into brown color.

Remove the avocado flesh from its skin and place it into a separate bowl.

Immediately, squeeze the fresh lemon juice onto it. 🥑🍋

Add the spices and mash the avocados into a slightly chunky paste.

Now add garlic, onions, tomatoes, chili, and coriander to it.

Gently fold everything together. Taste and adjust the spices.

Transfer the guacamole to a serving bowl and top it with some finely chopped, onions, tomatoes, and coriander.

Bursting with fresh flavors, homemade Guacamole is ready to serve.
Notes:
Guacamole and corn chips make a great snack for the kids.

Guacamole can also be used as a healthy spread for our sandwiches 🥪

We may seal the leftover guacamole with a thin layer of lemon-water.

Cover the lid of the container and refrigerate it for a day or two.
